How to Make the perfect Vietnamese Drip Coffee

  • One Vietnamese coffee filter (phin)

  • Boiling water

  • 3-4 teaspoons of Vietnamese coffee (Trung Nguyen is good)

  • 3 (more if you like it sweet) teaspoons of condensed milk

1. Pre-heat the cup and the filter (it works best when warm) with boiling water, pour the hot water out
2. Add coffee in the phin chamber, shake it till even (three-to-four teaspoons)
3. Put the filter on the coffee press it firmly, but don't make it too tight (some screw on)
4. Place the phin on top of the cup
5. Pour 10 ml of boiling water in, put cap on, wait 5 minutes for the coffee to swell
6. Carefully pour 50-70 ml in, put cap on, wait until the last drip has dropped (10-15mins)
7. Add the condensed milk in the coffee (if required) until you feel the coffee is thick enough. For iced coffee, add the ice after you have stirred in the condensed milk.
Tip: If the filter blocks midway through the process, take a cube of ice and rub the it along the bottom of the phin for a second until the coffee starts flowing.
